Chocolate Ice Cream
with chili and sea salt
Ingredients (for 1 5L ice cream basin):
4,500 kg | Carolina Premium Base Cioccolato |
0,040 kg | Piment d’espelette |
0,075 kg | Sea salt flakes |
Preparation:
- Mix Carolina Premium Base Cioccolato with chili powder in a suitable container.
- Add the mixture to the ice cream machine.
- Shortly before freezing, add the sea salt flakes.
Decoration:
Garnish with chili or chili threads and sea salt flakes.

Vegan Chocolate Ice Cream
with dates and cacao nibs
Ingredients (for 1 5L ice cream basin):
4,500 kg | Carolina Premium Base Cioccolato Vegano |
0,400 kg | Dates, coarsely chopped |
0,100 kg | Cacao nibs |
Preparation:
- Pour Carolina Premium Base Cioccolato Vegano into a suitable container and mix for 3 minutes.
- Stir-in the dates and cacao nibs.
- Add the mixture to the ice cream machine.
Decoration:
Garnish with cacao nibs and pomegranate seeds.
Tip:
For an oriental touch of flavour, add some ground cardamom to the ice cream mass.

0,150 kg | Bourbon vanilla paste |
0,250 kg | Pumpkin seed oil |
Preparation:Â
- Pour Carolina Premium Base Latte Naturale into a suitable container.
- Add vanilla paste and pumpkin seed oil and mix for 3 minutes.
- Add the mixture to the ice cream machine.
Decoration:
Garnish with caramelized pumpkin seeds.

0,400 kg | frischli Fruit Puree Raspberry |
0,400 kg | White chocolate, coarsely grated |
Preparation:
- Carolina Premium Base Latte Naturale into a suitable container.
- Add frischli Fruit Puree Raspberry and mix for 3 minutes.
- Stir-in the white chocolate.
- Add the mixture to the ice cream machine.
Decoration:
Garnish with fresh raspberries, white chocolate pieces and mint.
